Fruit-flavored soft drinks

Soft drink can be defined any type of nonalcoholic beverage produced by a soft drink manufacturer; includes bottled water, but not tap water. While fruit-flavored drink is a soft drink that is flavored to taste like fruit but does not contain juice.

The fruit flavors for soft drinks include: cherry, wild cherry, lemon, strawberry, raspberry, orange, pineapple, grape, loganberry, apple, pear, peach, and others less widely distributed. These flavors are of two general types, those which are obtained from natural products, such as the root, bark, leaf, and fruit of plants or trees, and those made in the laboratory by synthesizing or combining two or more chemicals.

Fruit-flavored soft drinks such as orange and lemon-lime often contain natural fruit extracts. Citric acid is an important processing ingredient in various fruit of flavor soft drinks. The citric acid levels in most fruit flavored carbonate drinks range from 0.10 to 0.25%.

An important advantage of added citric acid in beverages is its ability to provide a pleasant tartness and acid taste that complements fruit, berry, and other flavors.

Carbonated fruit flavored beverages

The term carbonated water applies only to products exclusively of distilled, deionized or treated carbonated water.

Fruit juices and extracts were added to carbonated water for improved favor. New carbonated flavors constantly appeared on the market.

Some of the most popular flavors were ginger ale, sarsaparilla, root beer, lemon and other fruit flavor. With regard to composition, fruit flavored beverages can be subdivided into two categories: Beverages flavored with fruit juices and another one beverages flavored with fruit flavor imitations or with a natural or mixed flavor ingredients.

The first group includes citrus, and other fruit based beverages – grapes, apple, pineapple etc. Carbonated fruit flavored beverages are the recent ones.

Usually, these beverages are made with 10% natural juices for health-conscious consumers. Citric and malic acids are used in carbonated fruit flavored beverages.

Flavoring agents are generally used in the form of emulsions. Caramel and synthetic coloring matters are used as ingredients to get desired colors.
