Quality control in soft drinks production

The beverage industry places a high priority on maintaining consistent product quality. Key factors in this regard include ensuring product safety, precise measurement of raw materials, monitoring critical process parameters, thorough data recording, and cost awareness.

To ensure a beverage is free from hazards and of high quality, manufacturers must adhere to the quality control steps outlined by food regulators. These steps encompass the entire process from raw material procurement to storage and distribution of the finished products. International and national regulatory bodies play a role in inspecting and certifying product quality before it reaches consumers.

Food quality control involves a set of procedures that companies must follow to comply with food quality regulations and meet acceptable standards, thus ensuring consumer safety. Several basic quality control tools are commonly employed: 1) Check sheets; 2) Graphs for trend analysis; 3) Histograms; 4) Pareto charts; 5) Cause-and-effect diagrams; 6) Scatter diagrams; 7) Control charts.

The responsibility for checking quality lies with all staff members, ranging from hygiene operators to those involved in product and packaging quality. This emphasizes the need for constant vigilance and individual accountability in maintaining product quality.

Soft drink companies employ both Quality Control (QC) and Quality Assurance (QA) throughout their production processes. QC primarily focuses on the production line itself, while QA encompasses the broader operations process and associated functions, promptly addressing potential issues.

Analyzing the nutritional values and ingredient quality is crucial in ensuring the safety and quality of beverages. Additionally, sensory evaluations involving color, taste, odor, and texture analysis play an effective role in assessing the final beverage quality. Implementing a Quality Management System (QMS) that incorporates good manufacturing practices is also essential.

Water for soft drinks

The main component of softdrink is water. Regular soft drink contain 90% water while diet soft drinks contain up to 99% water. The quality of the water used must by necessity, meet very stringent standards, as each bottle or can of a given drink must be indistinguishable from all others.

It is very important to provide consistent water quality at all times without going over the top in terms of system sophistication. It is important to minimize risk at all time. In the simplest terms, all water used for soft drinks must be free from micro-organisms, taints and odors, clear and colorless and especially if it is to be carbonated, free from dissolved oxygen.

Many soft drink plants have their own private water supply and the water from such sources may or may not be of suitable quality.

At each production site the treated water should be tested for conductivity, turbidity, microbiological level, taste, odor and appearance, alkalinity and free chlorine.

In addition, the incoming raw water should be tested daily for turbidity and microbiological levels. The ideal specification for a soft drink can probably be determined by reference to its microbiological contaminants but especially coliforms as evidence of faecal contamination, Crystosporidium and Giarda.

It would also be free from toxic substances such as heavy metals, hydrocarbons, pesticides, herbicides, dioxins, etc.
