Alitame is the generic name for L-alpha-aspartyl-N-N(2,2,4,4-tetramethyl-3-thetanyl-delta-alaninamide hydrate.

It is a white non-hygroscopic crystalline powder with good solubility in water

Alitame is approximately 2000 times as sweet as sucrose (10% equivalent).

The taste is similar to that of sucrose and aspartame.

Alitame is an amino acid derivative and therefore, not completely stable. It does hydrolyze in acid conditions, but is more stable than aspartame under conditions.

Alitame is partially metabolized and absorbed in humans and is excreted as a mixture of its metabolites and unchanged Alitame.

The caloric value of Alitame is 1.4 cal/g.

Alitame offers some benefits, such as stability at high temperatures and a broader pH range.

At a pH of 6-8 and at room temperature, it is stable for over a year, It is stable at high temperatures, withstanding pasteurization.

However, prolonged storage of acidic solutions at high temperatures or the combination with certain ingredients (hydrogen peroxide and sodium bisulfate) may produce off flavors.

Alitame is noncariogenic. From an oral load of alitame, 7-22% is unabsorbed and excreted in the feces.

The remainder is hydrolyzed to aspartic acid and alanine amide.

The aspartic acid is metabolized normally, and the alanine amide is excreted in the urine as a sulfoxide isomer, sulfone or conjugated with glucoronic acid,
